About the vintage : One word to describe the 2021 vintage: challenging!
After a beautiful March, the black frost in April destroyed between 50 and 70% of the harvest. Temperatures dropped to -8°C, which affected the buds. Vegetation recovered very quickly, resulting in a lot of work in the vineyard. Unfortunately, the summer was rainy, with a high risk of diseases such as powdery mildew and downy mildew. During the harvest, drastic sorting was carried out both in the vineyard and in the winery to ensure that the grapes were ripe. Ultimately, this vintage produces balanced, light wines with a fine, fresh structure.
Terroir : The estate owns several small plots on this Premier Cru site at the bottom of the hillside, including just under half of old vines that are over 65 years old. The deep roots and soil type ensure that the vines grow and the grapes ripen evenly, without excessive water stress, which is important in recent dry vintages. The wines are generally fine, balanced, and very harmonious.
Cultivation method : The vines are cultivated biodynamically. In the spring, we stimulated microbial life in our soils using dynamized preparations such as 500: horn manure, 500 P: prepared horn manure. During the growing season, in addition to our copper and sulfur treatments, we sprayed decoctions of horsetail, nettles, willow, and silica, which have energizing and protective properties that help the plants resist disease. Natural grass cover and mechanical cultivation. The vines are pruned using the single Guyot method with long canes and debudded every other bud, so that the bunches are beautiful and well-aerated.
Vinification : Grapes harvested by hand in crates, sorted on a sorting table if necessary, and transported directly to the pneumatic press. Whole grapes pressed for 2½ hours. The juice drained into stainless steel vats is left to settle at 12°C overnight. The must is then transferred directly into barrels for alcoholic fermentation.
Aging : 14 months aging on lees: 60% in 350L barrels that have held one wine and 40% in Burgundy barrels that have held two wines.
