About the vintage : One word to describe the 2021 vintage: challenging! After a beautiful March, the black frost in April destroyed between 50 and 70% of the harvest. Temperatures dropped to -8°C, which affected the buds. Vegetation recovered very quickly, resulting in a lot of work in the vineyard. Unfortunately, the summer was rainy, with a high risk of diseases such as powdery mildew and downy mildew. During the harvest, drastic sorting was carried out both in the vineyard and in the winery to ensure that the grapes were ripe. Ultimately, this vintage produced balanced, light wines with a fine, fresh structure.

The terroir : Vines planted mainly in the 1980s, this cuvée comes from our finest Chardonnay plots. Area: 4.4 hectares.

Cultivation method : The vines are cultivated using organic farming methods. Mechanical soil cultivation. They are pruned using the single Guyot method with long canes and one bud removed every other bud, resulting in beautiful, well-spaced bunches.

Vinification : The grapes are harvested manually into crates, sorted on a table if necessary, then transported directly to the pneumatic press. The whole grapes are gently pressed for several hours and the juice obtained is transferred to stainless steel vats for settling overnight. Finally, the must is immediately transferred to barrels for alcoholic fermentation.

Aging : 18 months aging on lees: 50% of the cuvée aged for 12 months in oak barrels + 6 months in stainless steel vats (25% in 220-liter casks with 5% new wood and 75% in Burgundy barrels (1/3 barrels of one wine, 2/3 barrels of two wines or more)) and 50% of the cuvée aged exclusively in stainless steel vats.
